- Place four 250ml-glasses and the yogurt in the freezer to chill.
- Peel the cucumber and cut it into pieces. Wash the mint, dab it dry and pick the leaves off the stems. Squeeze the lime.
- Place cucumber pieces, ¾ of the mint leaves, lime juice, chilled yogurt and ice cubes in a blender and blend until smooth. Season with salt and pepper to taste. Pour into chilled glasses and garnish with a few mint leaves. It tastes great with crispy Grissini (Italian bread sticks) which can be served plain or wrapped with smoked salmon, ham or beef carpaccio.
