“Chilled Cucumber Shake”

Serves 4

1 Fresh cucumber
1 Bunch of fresh mint
1 Lime
4 Ice cubes
Salt & pepper
500g Greek yogurt or other type of plain yogurt (10% fat)

  1. Place four 250ml-glasses and the yogurt in the freezer to chill.
  2. Peel the cucumber and cut it into pieces. Wash the mint, dab it dry and pick the leaves off the stems. Squeeze the lime.
  3. Place cucumber pieces, ¾ of the mint leaves, lime juice, chilled yogurt and ice cubes in a blender and blend until smooth. Season with salt and pepper to taste. Pour into chilled glasses and garnish with a few mint leaves. It tastes great with crispy Grissini (Italian bread sticks) which can be served plain or wrapped with smoked salmon, ham or beef carpaccio.
