Insalata di radicchio con filetto di pollo (Radicchio salad with chicken filet)

Serves 4

100 arugula or iceberg lettuce
1 radicchio
2 red onions
1 garlic clove
2 sweet apples
50g mushrooms
80g feta cheese
4 chicken breast filets (180g each)
sea salt
pepper from the mill
lemon thyme, fresh
30g walnuts
1 tbsp. rapeseed oil
2 tbsps. crema di balsamico
1 tsp. honey
olives, black
2-3 slices of lemon



  1. Break up arugula and radicchio/iceberg lettuce into bite-sizes pieces.
  2. Cut onions into strips, mince garlic.
  3. Slice apples and mushrooms.
  4. Cut feta cheese into cubes.
  5. Season filets.
  6. Chop thyme and walnuts.

Chicken breast filets

  1. Heat up oil in a skillet.
  2. Sauté filets for 5 minutes.
  3. Coat them with oil and put under the grill for 8 minutes.
  4. Steam radicchio, onions, mushrooms, garlic and apples for 5 minutes.
  5. Add thyme, nuts, olives and cheese and steam for another 3 minutes.
  6. Season with balsamico, honey, salt and pepper.

Serve with arugula/iceberg lettuce, lemon slices and chicken filets. Enjoy…
