1 Watermelon (1kg pulp)
70g Starch flour
1 Cinnamon stick
1 Pinch of clove powder
Dark chocolate, grated
- Cut the watermelon into chunks and remove the seeds. Save the juice. Blend melon chunks and juice in a blender.
- Mix the starch flour with 5–6 tbsp. of the melon puree. Add it to the rest of the melon puree and put everything in a pot. Add the sugar, cinnamon stick and the clover powder. Bring everything to a boil while stirring continuously and boil fast for 3 minutes. The melon puree will now take on its classic red color and thicken a little. Strain the puree and pour in a bowl.
- After the puree has cooled down, fill it into 6 decorative glasses or dessert cups. Refrigerate for at least 4 hours.
- Before serving garnish with grated chocolate and enjoy ice-cold.
